Zibibbo’s cooking courses are not “lessons“ but, rather, total immersion in the kitchen of a working restaurant. Students work, personally supervised by noted chef, author, and co-founder of Cibreo Restaurant, Benedetta Vitali, participating, collaborating, and observing all of the kitchen staff’s activities. With years of experience sharing her love for food and cooking, Benedetta is able to bestow her gifts on anyone, from the amateur to the professional, who wants to improve their skills in the kitchen.

The Restaurant
Zibibbo is a charming and intimate restaurant on the edge of Florence, just 10 minutes from the city center. Looking out over an enchanting grove of Tuscan cypress, the serene, airy atmosphere is elegant, yet comfortable. Zibibbo’s mission is to satisfy every customer by perfectly preparing every meal.
The menu
From fish, to meat, to vegetables--changes every day, and integrates innovation with traditional classics in order to produce a memorable dining experience. Only the best, freshest ingredients from Florence’s famous local markets are used at Zibibbo. Benedetta uses only local ingredients, all sustainably grown and raised, in order to support local farmers.
Zibibbo is open for lunch Monday through Friday. The kitchen closes at 3:00, and reopens for dinner from Monday through Saturday. Ample parking is available.
A day in the kitchen
Zibibbo’s intensive cooking program is offered from Monday through Friday. Class starts at 9,00 and lasts until lunch is served at 13,00. At lunch, the dishes prepared by the students are enjoyed with wines specifically chosen for each course.
Every morning, at least five recipes are made completely from scratch. Beyond the preparation of the day’s dishes, the students have the opportunity to interact with the Zibibbo cooks, observing, asking questions, and participating in the life of an actual working kitchen. Some dishes prepared by the students are also served to Zibibbo’s lunch and dinner guests. The morning starts with a small breakfast, when the day’s plan is reviewed. The next break comes at 11,00 where Italian coffee is shared, and the morning’s progress reviewed.
The cost for the Day in the kitchen program includes: lesson, breakfast, lunch with wine, insurance, recipes and a “Zibibbo” t-shirt.
Maximum number of students in this full immersion course is 4.
The experience can be planned as a Week-Long-Intensive program with a five days duration, from Monday trough Friday.
